Almonds
Almonds are one of the most widely used and longest cultivated nuts in the world. Their oval shaped seed is closely related to the Peach and Apricot.

Cashews
Cashews are native to South America; they grow inside apple-shaped fleshy fruit, with the nut poking from the end when ripe. The tall tree is a member of the poison ivy family. The shell is toxic so the nuts are always shelled before sale.
Raw cashews can be added to curries and other Asian style dishes or as a salad ingredient. |

Macadamia Nuts
The Macadamia Nut is native to Australia. It is cultivated mainly in New South Wales and Queensland. They grow on Macadamia trees and fall to the ground when ripe. The macadamia is a crisp round nut, with a hard shell and creamy flesh.
Macadamias are eaten raw or roasted as a snack. This nut is delicious crushed on ice cream and can be used in salads, biscuits, breads, muffins and other confectionery and desserts. |

Pine Nuts
The small slender seeds from mature cones of certain species of pine trees have been eaten in Europe since ancient times. Countries outside the Mediterranean find it difficult to harvest this nut because they do not crop until the trees are about 75 years old. Pine nuts are ground and used as the base for pesto. Their unique taste and filling properties adds richness to stuffings, vegetable dishes, stews, cakes and biscuits. They are often used to garnish rice dishes. |

Walnuts
Walnuts are encased in a hard, round shell and consist of two creamy-white, mild flavoured flesh. Most of the world's crop comes from California. Walnuts are available as a cooking walnut and also as the more premium walnut commonly referred to as Californian.
Generally the cooking walnut is used in biscuits cakes and stuffings. The premium Californian variety is used in salads and confectionery foods. The Waldorf Salad, the signature dish of the famous Waldorf-Astoria Hotel, would use Californian walnuts of course! |

Native to the United States, the Pecan is grown locally in New South Wales. They are an elliptical, smooth-shelled nut containing a rigid kernel with a sweet buttery flavour. |
